Prickly Pear Cactus Jelly

Tonight I’m simmering the fruit from my mom’s prickly pear cactus so I can make prickly pear cactus jelly.

If you look up Opuntia with your favorite Internet search engine, you can see what it looks like.

A few hints.

Long hot dog tongs.

Don’t fall.

Use a clean sugar or flour sack or even an old, but clean, pillow case to strain the juice.

When you are done, whatever you used to strain the juice should be thrown into the trash. If you are thinking about using your washing machine to save it, find the definition of glochid and then think underwear.

A second filtering, using coffee filters in a strainer is 100% effective in getting rid of all the “junk in the juice”.  It also ensures the jelly is perfectly clear.  I put the strainer in a canning funnel and collect the juice in a 1/2 gallon mason jar.
