Plum Jelly

ET (evil twin) mentioned plum jelly and that got me to thinking about making some for her.  I make prickly pear cactus jelly most summers and orange marmalade most Januaries, so I thought it would be interesting thing to try.

It has turned into an experiment.  The plum juice has, to me, a delicate flavor that is being masked by the huge amounts of sugar needed to make a jelly.  The amount of sugar, the amount of fruit juice, the type of fruit and the type of pectin are critical.  One pectin needs 6 cups of sugar for 4 cups of plum juice, a different pectin needs “only” 4 cups of sugar for 4 cups of plum juice and a third type of pectin doesn’t care about the amount of sugar.

The sugar is part of the preservative, so I do need to be careful with the low/no sugar recipes that I don’t create a science experiment that gets her (ET) sick.
